Old Fashiond Homemade White Bread With A Whole Whe...

Ingredients:

  • 2 cups milk
  • 2 tbsp shortening (solid) butter is good
  • 1/4 cup sugar
  • 1 tbsp salt
  • 1 package yeast
  • several cups of white all purpose flour--maybe 6
  • 2 cups whole wheat flour if making whole wheat bread
  • oatmeal , optional
  • cornmeal , optional

Directions:

  1. White Bread-makes two regular loaves
  2. Scald 2 cups milk
  3. In a bowl combine 2 Tablespoons shortening, sugar and salt.
  4. Pour the hot milk over and let sit until it has cooled to warm.
  5. Dissolve yeast in 1/4 cup warm water.
  6. Add flour to the milk mixture to make a thick batter.
  7. Beat well and add yeast mixture.
  8. Beat well again.
  9. Add flour working in until the mixture becomes stiff,
  10. Knead on a lightly floured board until the dough becomes smooth and elastic, maybe 8 -10 minutes, adding flour as needed
  11. Place in a greased or buttered bowl, turning once to distribute the shortening.
  12. Let stand in a warm place covered with a towell.
  13. Let rise until double. Punch down and divide into two loaves.
  14. Place dough in two greased pans smoothing top and let rise again until double.
  15. Bake in a 425 degree oven for about 45 minutes or until bown.
  16. If you thump the bottom of the bread pan and it sounds hollow it is surely done.
  17. Whole Wheat Variation: (my favorite)
  18. Substitute 1/3 cup molasses for the sugar
  19. Substitute bacon fat for shortening
  20. Use about 2 cups whole wheat plus whatever you need of the white all purpose flour.
  21. You can also add some (1/4 cup) oatmeal or corn meal or other grain to either of these breads for a little change.
  22. This is a super basic recipe, and it seems rather vague but it always turns out..
