Old England Ham Chowder

Ingredients:

  • 3 medium carrots
  • 2 medium potatoes
  • 1 tbsp butter
  • 2 tbsp cream
  • 1 1/2 liters chicken stock
  • 1 tbsp chopped dill

Directions:

  1. Finely chop the onions and the celery and fry in butter.
  2. When softened and translucent add diced carrots.
  3. Cube the gammon ( approx 1 x 1 cm cubes) and add to the mixture.
  4. Let simmer for a few minutes frequently stirring.
  5. Add the cubed potatoes, the chicken stock and marjoram.
  6. Let simmer for approx 30 minutes till the potatoes start breaking up ( use a flowery variety such as King Edward).
  7. Take off the heat and add the cream.
  8. Season to taste.
  9. Garnish with chopped fresh dill.
