Oh Baby Homemade Carrot Cake

Ingredients:

  • 2 1/4 cup. unsifted flour
  • 1 1/2 cup. sugar
  • 2 tsp. baking soda
  • 1 1/2 tsp. cinnamon
  • 1 1/2 tsp. nutmeg
  • 1/2 tsp. salt
  • 1 cup. vegetable oi
  • 3 eggs
  • 1/2 cup. milk
  • 3/4 cup. chopped nuts
  • 1/2 cup. raising (optional)
  • frosting
  • 2 tsp. milk
  • 1/4 tsp. vanilla
  • dash salt
  • 2 1/4 cup. powdered sugar

Directions:

  1. Preheat oven to 325 degrees.
  2. Mix dry ingredients together.
  3. Add oil,eggs,milk and carrots.
  4. Beat on high for 2 minutes.
  5. Stir in coconut,nuts and raisins.
  6. Bake for 55-60 minutes.
  7. Frosting:
  8. Cream butter,milk ,vanilla,cream cheese and salt.
  9. Add powdered sugar and beat until right consistency.
  10. Frost cooled cake.
