Sweet Potato Bread

Ingredients:

  • 1 3/4 cups flour
  • 1 1/2 cups sugar
  • 3/4 tsp salt
  • 1/4 tsp ground cloves
  • 2 eggs
  • 1/2 cup vegetable oil
  • 6 tbsp orange juice

Directions:

  1. In a large bowl, combine the first eight ingredients. In a small bowl, wihsk eggs, sweet potatoes, oil and orange juice. Stir into dry ingredients just until moistened. Fold in pecans. Transfer to a greased 9 x 5 x 2 inch loaf pan. Bake at 350 for 60-65 minutes or until toothpick inserted near center comes out clean. Cool 10 minutes before removing from pan to a wire rack.
