Oaty Currant Bread

Ingredients:

  • 2 cups plain flour
  • 1 tsp salt
  • 2 tbsp brown sugar
  • 2 tbsp molasses
  • 200 g currants
  • 150 ml milk

Directions:

  1. Place all the dry ingredients in a mixing bowl.
  2. Using a fork, stir till combined.
  3. Mix together molasses,yoghurt, currants and milk and add to dry ingredients.
  4. Beat till a smooth, thick batter forms.
  5. Grease loaf tin , 20 x 13 cms.
  6. Pour batter into tin, leave to stand 10 minutes.
  7. This allow oats to swell and absorb liquid.
  8. Bake at 180 C for 55 - 60 minutes.
  9. Serve sliced and buttered.
