Ingredients:

  1. The night before you plan to serve the waffles, combine the buttermilk, orange juice and oats in a medium bowl.
  2. Mix well, cover, and refrigerate over night.
  3. In a large bowl, whisk the egg.
  4. Add the sugar and mix.
  5. Add the flours, baking soda, salt and the oat mixture and mix well.
  6. Stir in the melted butter. The batter will be slightly lumpy.
  7. Preheat and lightly grease a waffle iron.
  8. Spoon a generous 1/2 cup of batter onto the hot iron and close the lid.
  9. Cook until no more steam escapes from the iron and the waffle is golden on both sides, about 5 minutes.
  10. Serve immediately with butter and maple syrup.
