Oatmeal Onion Batter Bread

Ingredients:

  • 1 tsp quick oats
  • 2 tbsp brown sugar
  • 2 1/4 tsp yeast
  • 3 cups flour
  • 3/4 cup onion, minced
  • 1 tsp salt
  • cooking spray

Directions:

  1. Combine 1 cup of water, 1/2 cup oats, and brown sugar in a small bowl.
  2. In a separate bowl, dissolve yeast in 1/4 cup of water; let stand 5 minutes.
  3. Add oat mixture, flour, 1/2 cup oats, onion, oil, and salt.
  4. Stir until well blended. Mixture will be stiff.
  5. Cover and let rise until double in size (about 45 minutes).
  6. Stir down batter and spoon into loaf pan that has been sprayed with cooking spray.
  7. Sprinkle with 1 teaspoon of oats.
  8. Cover and let rise until double (about 30 minutes).
  9. Bake at 375 degrees for 50 minutes.
