Ingredients:

Directions:

  1. Preheat panini grill to high.
  2. In a bowl, combine the pimentos, Cheddar, Monterey Jack, mayonnaise, pepper, salt, garlic powder, and paprika; taste and adjust seasoning, if needed.
  3. Brush one side of each bread slice with butter.
  4. Place two slices on a work surface, buttered side down, and spread evenly with pimento cheese.
  5. Cover with top halves, buttered side up, and press gently to pack.
  6. Place sandwiches in grill, close the top plate and cook until golden brown, 3-4 minutes.
  7. Serve immediately.
