Mushroom Wheat Berry Pilaf

Ingredients:

Directions:

  1. Heat olive oil in large pan over low heat; add onions and sweat until soft, about 10 min.
  2. Add garlic and continue cooking 5 min.
  3. Add butter and melt; add mushrooms and soy sauce, increase heat to medium, and cook 5-10 min. until mushrooms release moisture.
  4. Add wine and chicken broth and simmer 5 min. until wine starts to evaporate.
  5. Add wheat berries, rice, spices and heat through.
  6. Add salt and pepper to taste.
