Mozzarella & Prosciutto in Carrozza

Ingredients:

Directions:

  1. Lay out 6 slices of bread.
  2. Place one piece of mozzarella (can use fresh balls sliced thin) on each.
  3. Lay on a small piece of prosciutto.
  4. Smear with a dab of anchovy paste.
  5. Top with remaining bread slices.
  6. Press down and cut with a 3 round cutter into circles.
  7. Put flour, egg, and breadcrumbs into separate bowls.
  8. Dip one sandwich circle into the flour, then the egg, then the breadcrumbs.
  9. Make sure edges are sealed.
  10. Fry in hot olive oil until golden and drain on paper towels.
  11. Mangia subito! Eat right away!
