Mountain Country Cat Head Biscuits As Big As A Cat...

Ingredients:

  • 2 cups of flour
  • 1/4 tsp of baking soda
  • 2 tsp of baking powder
  • 1 tsp of salt
  • 5 tbsp of lard or shortening
  • about 1 cup of buttermilk
  • sift the dry ingredients together and cut in the lard or shortening. add enough buttermilk to make a soft dough.
  • pinch off about a lemon sized ball of dough for each biscuit and pat out with your hands.
  • remove the biscuits form the oven and put butter on the tops of the hot biscuits to coat.

Directions:

  1. Picture is of a big ole plate of 'cats' full of good ole' Virginia Ham.
  2. Often times the cooks would take treats like this out to the field
  3. With big jugs of iced tea and kegs of water for the hard workers
  4. In the fields about mid afternoon.
  5. Some cooks would get sort of silly and make them in a cats head
