Ingredients:

  • 3 eggs
  • 2 cups sugar
  • 1/2 cup brown sugar
  • 1 cup oil
  • 1 tsp vanilla
  • 1 cup zucchini
  • 3 cups flour
  • 3/4 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp salt
  • 1/2 cup nuts (optional)

Directions:

  1. Cream together the eggs, sugar, and brown sugar.
  2. Add oil, vanilla, and zucchini.
  3. Add flour, baking soda, cinnamon, pumpkin pie spice, and salt.
  4. Beat for 1 minute on medium speed.
  5. Bake 1 hour at 350 degrees.
