Ingredients:

  • 1 medium waxy potato
  • 1/2 small parsnip, peeled
  • 1 shiny red apple
  • 1 pear (i'm no expert, use whichever you like best)

Directions:

  1. Chop fruit and veggies into large chunks, about an inch square. Keep them apart as we'll be cooking them in stages.
  2. First heat some oil in a large (REALLY large) frying pan, and add the potato and parsnip.
  3. Stir around for a couple of minutes, and add the sausages to the pan. Once the sausage and veggies are looking golden, add the onion.
  4. And once that's looking cooked, add the fruit. It's best not to cook it too long in case it burns.
  5. If the sausages look ready you can remove them from the pan.
  6. Season with salt, pepper and rosemary and give it all a big stir.
  7. Divide the sausages and fruit/veggie mixture between two plates. Serve with crusty wholemeal bread.
