Mom's Sausage, Bean and Sweet Potato Soup

Ingredients:

Directions:

  1. In a large pot, lightly brown sausage, remove and set aside.
  2. In the same pot, combine 1 can of beans, garlic, bay leaf, allspice, broth and 1 1/2 quarts water.
  3. Cook, partially covered about 15 minutes, then remove bay leaf.
  4. Peel sweet potatoes and cut into 1/2 inch pieces.
  5. In another pan, steam potatoes until tender, about 10 minutes.
  6. Drain potatoes and set aside.
  7. Puree or mash second can beans with 1 cup of the cooking liquid, and add to pot.
  8. Stir tomato paste and 1 tablespoon water together.
  9. Add sausage, tomato mixture, and Worcestershire sauce.
  10. Lower heat (to simmer) and continue cooking soup, covered, for 15 minutes.
  11. Add potatoes, chopped green onions, and salt and pepper to taste.
  12. Garnish with reserved chopped green onions.
