Mom's Famous Potatoes

Ingredients:

Directions:

  1. Boil potatoes in salted water until not quite done.
  2. Drain, cool and scrape off peels.
  3. Grate potatoes into a large bowl, using the big holes of the grater.
  4. Peel onion, cut in half and slice very thin.
  5. Mix onions with potatoes.
  6. Add salt, pepper and nutmeg.
  7. Grate cheese and add to potatoes saving about 1 cup for top.
  8. Add sour cream and mix well.
  9. Taste and adjust seasonings.
  10. Pile into a 9 X 13-inch baking dish and top with remaining cup of cheese.
  11. Sprinkle with paprika.
  12. Bake for approximately 1 hour at 350 degrees.
  13. If prepared ahead and refrigerated, allow more baking time.
