Mom's Buttermilk Cornbread

Ingredients:

  • 1 1/2 tbsp flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 cup buttermilk
  • 1 egg
  • 1 tbsp cooking oil

Directions:

  1. Heat oven to 450°F
  2. Pour 1/2 the oil into a small (cast iron) skillet and let heat with oven.
  3. Mix dry ingredients.
  4. Add buttermilk, egg and remaining oil.
  5. Mix until lumps are gone. Remove skillet from hot oven and pour batter inches.
  6. Bake for 20-25 minutes.
  7. ***If making a double batch, DO NOT increase egg amount, but double everything else.
