Mom Blair's Rhubarb Crisp

Ingredients:

  • 1 1/4 cups flour
  • 1/4 cup sugar
  • 1 1/2 cups granola cereal
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 cup packed brown sugar
  • 1/2 cup soft butter

Directions:

  1. In bowl combine rhubarb, 1/4 cup sugar and flour.
  2. Stir in jam and set aside.
  3. In bowl combine remaining flour, granola, cinnamon and ginger.
  4. Stir in brown sugar and pecans.
  5. Blend in butter until crumbly.
  6. Press 2 cups of granola mixture into bottom of 8 square baking pan.
  7. Spoon rhubarb mixture over top cover evenly with the rest of mixture.
  8. Bake 375 45-50 minutes till golden brown.
