Molasses Cake

Ingredients:

  • 1 (18 oz) package spice cake mix (i use duncan hines or betty crocker)
  • 2/3 cup milk
  • 4 eggs
  • 1/4 cup molasses
  • 1 cup chopped walnuts (optional)
  • 1 cup raisins or 1 cup c or 1 cup dried fruit (optional)
  • 1 (16 oz) container prepared white frosting
  • 2 tbsp molasses

Directions:

  1. Cake: Preheat oven to 350 degrees.
  2. Grease and flour 13 x 9 pan.
  3. I use Bakers Joy Spray.
  4. In a large bowl combine cake mix, milk, eggs and molasses (and fruit or nuts if using).
  5. Beat on low for 2 minutes.
  6. Beat on high for 4 minutes.
  7. Pour into prepared pan.
  8. Bake for 35-40 minutes or until center of cake springs back when lightly pressed.
  9. Cool in pan.
  10. Frost when completely cool.
  11. Frosting: In a medium bowl stir molasses into frosting until completely mixed.
  12. Spread on cake.
