  1. Place one large dried shitake mushroom in 1-1.2 cups of water and let sit for about half an hour before removing mushroom and mincing it. Dissolve 1 tablespoon miso paste in 1-1/2 cups water and heat. Add diced tofu cubes, minced scallion, and minced shitake. Heat through and serve.
