Mint Layer Fudge

Ingredients:

  • 2 1/4 cups sugar
  • 1/4 cup butter
  • 1/4 tsp salt
  • 1 1/2 cups sifted powdered sugar
  • 1/4 tsp peppermint extract
  • 2 drops green food coloring

Directions:

  1. CHOCOLATE LAYER:.
  2. In a heavy 3-quart saucepan mix sugar, evaporated milk, marshmallow creme, butter and salt.
  3. Cook, stirring constantly, over medium heat until mixture comes to a rolling boil. Boil and stir 5 minutes.
  4. Remove from heat. Stir in chocolate chips until completely melted. Add vanilla.
  5. Pour into a buttered 8-inch square baking pan. Let cool.
  6. MINT LAYER:.
  7. Stir together 2 tablespoons butter, powdered sugar, evaporated milk, peppermint extract and green food coloring.
  8. Mix until smooth. Pour over cooled chocolate fudge.
  9. Refrigerate until firm. Cut into 1-inch squares.
