Ingredients:

  • 3/4 cup flour (whole wheat would be good)
  • 1/2 cup brown sugar
  • about 2 tbsp butter ( i used promise to avoid hydrogenated oils)

Directions:

  1. Preheat oven to 350.
  2. Combine Flour and Brown Sugar in a large bowl.
  3. Slowly add butter, using a fork to break it up and mix it in. Add just enough butter to achieve a crumb-like consistency. Set this aside.
  4. Separate each biscuit into two halves putting each half in its own cup in a large muffin tin.
  5. Use your fingers to create a mini pie crust with each biscuit half.
  6. Fill each cup with about 1 & 1/2 tbsp of pie filling.
  7. Top each mini pie with the Flour/ Sugar/ Butter crumb topping.
  8. Bake for about 20 minutes.
  9. Remove from oven and let cool for 5 minutes before removing from pan.
  10. It's best to use a pair of tongs to remove these from the pan, I had no problem with them sticking, as I use a non-stick pan, there was no need to butter the pan.
