Directions:

  1. Grind meats using a food processor, transfer to bowl. Add shallot, garlic, lemongrass, jalapeno and herbs to processor and pulse until finely chopped - add to meat mixture. Season meat with soy, fish sauce and sugar and mix in cornstarch. Taste test by cooking a tiny little piece in a saute pan. Adjust seasonings as needed. Place in fridge for at least an hour.
  2. Divide meat mixture into small patties that will fit with however long you slice your baguettes. Sear patties in a little canola oil over med-high heat, until golden brown on each side, slightly caramelized.
  3. Assemble with bread and toppings.
