Not your traditional Bahn Mi but using basic Vietnamese flavor elements to create these delicious small bites. I had the idea for them when I saw Trader Joe's organic mini baguettes. I made these today for a company beer bash and they were a hit (we are having the extras for dinner tonight! Read more !)
Ingredients:
2 fatty pork chops, deboned
2 lbs. organic chicken thighs
1 shallot, peeled and chopped
3 cloves garlic, peeled
2 tablespoon lemongrass, finely chopped
1/4 cup fresh cilantro
1/4 cup fresh mint
fish sauce, soy sauce, organic sugar, to taste
i fresh jalapeno, chopped (remove membranes and seeds for less heat if desired)
1/4 cup cornstarch
canola oil, for searing
mini baguettes
fresh mint leaves
cucumber slices
sriracha aioli
pickled carrots
Directions:
1. grind meats using a food processor, transfer to bowl. Add shallot, garlic, lemongrass, jalapeno and herbs to processor and pulse until finely chopped - add to meat mixture. Season meat with soy, fish sauce and sugar and mix in cornstarch. Taste test by cooking a tiny little piece in a saute pan. Adjust seasonings as needed. Place in fridge for at least an hour.
2. Divide meat mixture into small patties that will fit with however long you slice your baguettes. Sear patties in a little canola oil over med-high heat, until golden brown on each side, slightly caramelized.
3. Assemble with bread and toppings.
