Ingredients:

Directions:

  1. Mix upper set of ingredients and refrigerate.
  2. Saute carrots in olive oil.
  3. After 10 minutes, add the onions and cook until soft.
  4. Add the garlic and spices and cook for another minute or two, stirring constantly.
  5. Mix all ingedients together and fold into a loaf pan.
  6. Cover top with about 1/4 inch of ketchup and bake at 350 degrees for 1 1/2 hours.
  7. Optional: Mix barbeque sauce with the ketchup to jazz it up.
