Ingredients:

Directions:

  1. Heat over medium heat in a large skillet:
  2. 2 tablespoons olive oil
  3. Add and stir until tender (about 5 minutes):
  4. 1 cup chopped onions
  5. Add and stir until well coated:
  6. 1 tablespoon minced garlic
  7. 1/2 teaspoon ground cumin
  8. 1/2 teaspoon ground coriander
  9. 1/2 teaspoon ground turmeric
  10. 1/2 teaspoon sweet paprika
  11. 1/2 teaspoon ground ginger
  12. 1/2 teaspoon ground black pepper
  13. 1/4 teaspoon salt
  14. 1 cup medium-grain rice
  15. Add and bring to a simmer:
  16. 1 1/2 cups chicken stock
  17. Reduce the heat to low, cover, and simmer until the rice is cooked (about 20 minutes).
  18. Turn the mixture into a large bowl, let cool slightly, and add:
  19. 1/4 cup golden raisins
  20. 1/4 cup diced pitted prunes
  21. 1/4 cup silvered blanched almonds, toasted
  22. 1 teaspoon grated lemon zest
  23. 2 tablespoons fresh lemon juice
  24. 1 large egg, lightly beaten
  25. Adjust the seasoning to taste and:
  26. 1) use as a stuffing or
  27. 2) turn into a large, shallow buttered baking dish, cover, and bake at 350 F until the flavors are blended and the stuffing is hot (about 20-30 minutes).
