Microwave Rice Pudding

Ingredients:

  • 1/2-3/4 cup sugar
  • 2 tbsp cornstarch
  • 1/4 tsp salt
  • 3 cups milk
  • 1 egg
  • 2 -3 cups rice
  • 2 tbsp butter
  • 1 tsp vanilla

Directions:

  1. Make sure the rice is cooked ahead of time.
  2. Whisk first 6 ingredients.
  3. Put in microwave and cook 1 - 1 1/2 minutes.
  4. Remove and whisk.
  5. Put back in microwave for another 1 - 1 1/2 minutes.
  6. Remove and whisk.
  7. Continue above steps until desired thickness (don't get too thick, you want it a little less thick than desired since it will continue to thicken as it sits).
  8. Add butter and vanilla once it's at desired thickness. You can omit butter to save on calories!
  9. Add anything else you want (cinnamon, nutmeg, etc).
  10. Enjoy!
