Microwave Peanut Butter and Jam Bars

Ingredients:

  • 1/3 cup peanut butter
  • 1/3 cup firmly packed light brown sugar
  • 1/3 cup sugar
  • 1 egg
  • 1 2/3 cups all-purpose flour
  • 2/3 cup strawberry jam or 2/3 cup preserves ( not jelly)

Directions:

  1. Combine margarine, peanut butter, sugars and egg.
  2. Then add flour and beat until crumbly.
  3. Reserve one cup of the crumbs.
  4. Press remaining crumbs into an 8 square glass dish.
  5. Place on inverted plate in microwave.
  6. Cook at medium 6 1/2 minutes or until base looks dry.
  7. Spread jam to base within 1/2 of edge.
  8. Sprinkle with reserved crumbs.
  9. Cook on medium 6-7 minutes.
  10. Cool.
  11. Makes 16 bars.
