Microwave Peanut Brittle

Ingredients:

  • 1 cup sugar
  • 1/8 tsp. salt
  • 1 tsp. oleo
  • 1/2 tsp. vanilla
  • 1 tsp. soda

Directions:

  1. In a 1 1/2 quart casserole, stir together peanuts, sugar, syrup and salt.
  2. Cook 8 minutes on High in a microwave oven, stirring well after four minutes.
  3. Stir in oleo and vanilla.
  4. Microwave two minutes longer on High. Add soda and quickly stir until light and foamy.
  5. Immediately pour onto lightly greased baking sheet; spread out very thin.
  6. When cooled, break into small pieces.
  7. Store in an airtight container.
  8. Makes 1 pound.
