Microwave Made Fresh Blueberry Pie

Ingredients:

Directions:

  1. Combine dry ingredients thoroughly. (This keeps the cornstarch from clumping.).
  2. Stir in berries and lemon juice.
  3. Microwave about 5 minutes total, stirring every 30 seconds and crushing many of the blueberries, until thick.
  4. Stir in butter and lemon juice.
  5. Cool somewhat.
  6. Gently stir in fresh blueberries and pour into prepared pie shell.
  7. Refrigerate at least 4 hours before serving.
  8. Top with sweetened whipped cream if desired.
