Microwave Cocoa Fudge

Ingredients:

  • 2/3 cup soy milk
  • 2/3 cup butter
  • 2 cups sugar
  • 2/3 cup cocoa
  • 2 tsp vanilla

Directions:

  1. In a 2 quart microwavable bowl, put the soy milk, butter, and sugar.
  2. Microwave for 5 minutes.
  3. Stir.
  4. Microwave for 5 more minutes.
  5. Stir.
  6. Add the cocoa.
  7. Stir.
  8. Microwave for 5 more minutes.
  9. Stir.
  10. At this stage I started checking for soft ball stage. You could use a candy thermometer if you have one. I do not!
  11. I was already there. So I did not cook any more.
  12. I had a prepared 8x8 pan, I had used butter for the bottom and sides. This stood ready for use.
  13. I stirred until the fudge lost its gloss.
  14. Added the vanilla.
  15. Stirred some more.
  16. I put it into the pan, to soon I am sure, I was tired and it was close to midnight.
  17. Put the snap on top onto the pan.
  18. In the morning it was perfect.
  19. Yeah me, I made the fudge I was craving!!!
