Memas Raw Potato Pancakes

Ingredients:

  • 3 medium potatoes
  • 2 eggs
  • 1 tsp of salt
  • 1 1/2 tbsp of flour
  • 1/2 tsp of baking powder

Directions:

  1. Peel and grate three medium potatoes.
  2. Add to them the beaten YOLKS of 2 eggs.
  3. Stir in salt, flour and baking powder.
  4. Mix well and then fold in stiffly beaten egg whites.
  5. Drop into hot fat by spoonful and cook until golden brown.
  6. Drain on brown paper bags.
