Ingredients:

Directions:

  1. Combine sweet potatoes, sugar, salt, cinnamon and nutmeg.
  2. Beat egg yolks; add with butter to potato mixture. Mix well.
  3. Add milk and combine.
  4. Beat egg whites until stiff but not dry; fold into the mixture.
  5. Pour into unbaked pie shell.
  6. Bake at 200C for 15 minutes. Reduce heat to 180C and bake 25 minutes, or until firm.
  7. Cool.
