Mediterranean-Style Salad Dressing

Ingredients:

  • 1 1/2 cups olive oil
  • 1/2 cup red wine vinegar , plus
  • 1 tsp sugar
  • 1 1/2 tbsp oregano
  • 1 1/2 tbsp basil
  • 2 tsp salt
  • 1 tbsp onion powder
  • 1 tbsp fresh minced garlic clove (or to taste)
  • 1 1/2 tbsp dijon mustard
  • 1/3 cup parmesan cheese (or to taste) (optional)
  • 1/2-1 tsp fresh ground black pepper (or to taste)

Directions:

  1. Pour all ingredients in a large glass jar, and whisk or mix with a spoon until well combined or you can also blend in a processor or a blender.
  2. Adjust all seasonings to suit taste, including the sugar and salt.
  3. Let sit in fridge for a minimum of 2 hours.
  4. Shake very well before using.
