Ingredients:

  • 2 1/4 lbs ground beef
  • 3 eggs
  • 1/2 large bell pepper, chopped (about 1/2 cup)
  • 1/2 medium onion, diced (about 1/2 cup)
  • 1/2 cup ketchup
  • 3/4 cup breadcrumbs
  • 1/4 tsp garlic powder
  • 1/4 tsp pepper
  • 1/4 tsp salt (optional)
  • tomato paste (optional)
  • 1 tsp mustard
  • 1 tbsp honey

Directions:

  1. Preheat oven to 350.
  2. Fold aluminum foil so that it fits just in the bottom and over the two wide sides of 5x9 loaf pan. You'll use this to lift the meatloaf from the pan when done. Place in loaf pan.
  3. Beat eggs.
  4. Add ketchup, garlic, salt and pepper, and mix.
  5. Add peppers, onions, and ground beef.
  6. Mix lightly.
  7. Add breadcrumbs and mix well.
  8. Place in 5x9 loaf pan and shape.
  9. Bake for 1 hour and 15 minutes.
  10. Mix tomato paste, mustard, and honey. Spread over meatloaf.
  11. Bake additional 15 minutes.
  12. (Paste is optional. If not used bake 1 1/2 hours).
