Ingredients:

  • 1 tbsp agar agar
  • 1 2/3 cup soy milk
  • 1 tsp salt
  • 2 tsp matcha
  • 4 tsp hot water
  • 2 1/2 cup water
  • 1/2 cup soy milk
  • 2 tsp sugar
  • 2 tsp cornstarch
  • 1 tbsp cold water

Directions:

  1. Soak the agar-agar in cold water for about 20 minutes to soften. Wring out.
  2. In a small pan, heat the mixture until the agar-agar dissolves. Add the milk and salt, and mix. Remove from heat and set aside to cool to 120 degrees.
  3. Mix the matcha and hot water in another cup and stir briskly until the paste becomes smooth. Add th ecooled mixture and mix well. Put into a square pan around 5 x 5 inches and place in the refrigerator to set.
  4. When set, cut into long thin strips and place in a serving dish.
  5. Heat the dressing ingredients (milk, sugar, and salt) in a small pan. Add the cornstarch dissolved in cold water. Remove form heat and set aside to cool. Add the apple vinegar.
