Ingredients:

  • 1.5 lbs turnips
  • 1/4 cup cream or whole milk
  • 1 tsp salt
  • 1/2 tsp white pepper
  • 1 tbsp butter

Directions:

  1. Peel the waxy skin off the turnips.
  2. Cut into 1 inch cubes.
  3. Boil in water for 25 mins (optional, add salt to water).
  4. Drain.
  5. Add cream, salt, pepper and butter.
  6. Mash with hand mixer until smooth.
  7. Be sure not to overcook the turnips; they will absorb too much water!Optional: Top with crispy shallots - slice thinly and pan fry on medium high heat in 1tsb olive oil and 1 tsb butter for 30 mins.
