Maryland White Potato Pie

Ingredients:

  • 2/3 cup butter
  • 1 cup sugar
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 1/2 cup milk
  • 2 tsp lemons , rind of
  • 2 tbsp lemon juice
  • 1 tsp vanilla
  • 1/8 tsp nutmeg

Directions:

  1. Combine potatoes, butter, sugar, baking powder and salt in medium bowl, mix well.
  2. Gradually add whipping cream and milk, stirring until well blended.
  3. Stir in lemon rind, juice, vanilla and nutmeg.
  4. Add eggs mixing well.
  5. Pour into pie crust. Bake at 350'F for 55 minutes knife comes out of center clean.
