Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Grease and flour three 9 round cake pans.
  3. In a large mixing bowl, cream butter,shortening,and sugar. Add egg yolks one at a time, beating well after each addition.
  4. With mixer running on low, add flour and buttermilk alternately until well combined.
  5. Add baking soda.
  6. Stir in pecans and coconut.
  7. In a separate mixing bowl, beat egg white until soft peaks form.
  8. Gently fold into cake batter.
  9. Pour batter into prepared pans.
  10. Bake for 25 minutes or until inserted toothpick comes out clean.
  11. Cool in pan for 10 minutes then turn out onto wire racks.
  12. Cool completely.
  13. Frosting:
  14. In a mixing bowl, cream butter and cream cheese until light and fluffy. Add vanilla.
  15. Gradually add powdered sugar and beat until well blended and creamy. If frosting is too stiff,add a little milk.
  16. Stir in pecans and coconut.
  17. Frost cake as usual.
  18. Suggestion:
  19. Leave the sides of the cake unfrosted for better presentation.
