Ingredients:

  • 1 tbsp yeast
  • 1/2 cup warm water
  • 1 3/4 cups flour
  • 1 3/4 cups barley flour
  • 1 tsp salt
  • 4 tbsp malt syrup
  • 1 tbsp molasses
  • 1/2 tbsp margarine

Directions:

  1. Blend yeast into water and let stand 10 minutes.
  2. In another bowl, mix flours and salt.
  3. Stir in yeast slurry.
  4. Warm the malt syrup, molasses and margarine until just melted.
  5. Stir the warm (not hot!) mixture into the flour/yeast blend. It should form a soft, sticky dough (add more water if needed).
  6. Knead on floured board for 10-15 minutes.
  7. Divide into two, and put into two prepared loaf pans.
  8. Leave to rise until the dough fills the pans completely (this may take quite a while, up to 90 minutes).
  9. Bake 30 - 40 minutes at 400F, turn out of pans immediately and cool on wire racks.
