Make-Ahead Mashed Potatoes

Ingredients:

  • 5 lbs potatoes
  • 1 cup sour cream
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup margarine
  • 1 tbsp margarine

Directions:

  1. Peel and boil potatoes.
  2. Mash potatoes.
  3. Add cream cheese, sour cream, onion, salt and pepper and 1/2 cup margarine.
  4. Mix well with mixer.
  5. Put in a 13 x 9 inch pan.
  6. Dot top with 1 Tablespoon margarine.
  7. Refrigerate 1 to 2 days.
  8. Bake at 350 degrees Fahrenheit for 45 minutes.
