Ingredients:

  • 4 medium potatoes
  • 1 cup finely chopped salt pork
  • 1 medium onion
  • dash of allspice
  • 1 cup flour
  • 1 tsp salt
  • 2 1/2 quarts water
  • 1 tsp salt
  • 1/4 cup butter,melted

Directions:

  1. Pare potatoes,cut in large pieces.
  2. Placing 1 salt water to boil.
  3. Add potatoes,bring to boil again,reduce heat,cover and cook until tender,drain.
  4. Shake the pan gently over very low heat to dry the potatoes.
  5. Put them through a food mill (or) ricer,making sure they measure 3 cups,cool.
  6. Cook and stir salt pork until good and brown,remove with slotted spoon.
  7. Cook the onion in the pork fat,stirring until tender,remove from pan.
  8. Mix salt pork,onion and allspice,cool.
  9. Mix potatoes,flour and 1 teaspoon salt,beat in egg.
  10. Knead in anywhere from 1/4 to 1/2 cup flour to make dough easy to handle.
  11. Shape dough into 1 balls.
  12. Press hole in center of each,placing 1/4 teaspoon pork mixture in hole.
  13. Seal and reshape into ball.
  14. Repeat with remaining dough and pork mixture.
  15. Heat water and 1 teaspoon salt to boiling stage.
  16. Place dumplings in boiling water,stir once or twice.
  17. Reduce heat,simmer uncovered,turning once,until dumplings are done,about 6 to 8 minutes.
  18. Remove with slotted spoon.
  19. Heat homemade butter over low heat until golden brown.
  20. Pour over dumplings.
  21. ~ May be served with Bechamel sauce laced with allspice....minus the browned homemade butter...to which is my preferences in lieu of the Bechamel sauce ~
