  1. Preheat oven to 350 degrees. Grease muffin cups.
  2. In large bowl, pour boiling water over cereal, mix well to soften, and allow to cool.
  3. In small bowl, mash bananas and mix with baking soda. Add mashed banana mixture, oil, eggs, milk and sugar option to cooled bran mixture. (can substitute molasses, honey, brown sugar, white sugar, or Splenda).
  4. Mix just long enough to blend on low setting. Sift flour and baking powder together and add to bran mixture in halves, beating briefly after each addition. Stir in walnuts. Drop batter into cups three fourths full.
  5. Bake for 20 to 25 minutes in preheated oven. When cooled slightly, remove from pan and place on rack to cool completely.
