Low Fat Apricot Stuffed Chicken Breasts

Ingredients:

Directions:

  1. Flatten chicken breasts to uniform thickness.
  2. Combine apricots,onion,almonds and parsley.
  3. Divide apricot mixture between chicken breasts; roll up and secure with toothpicks.
  4. Bake in pre-heated 350 oven for 30 to 40 minutes or until done.
  5. Remove from oven and transfer to serving plate;keep warm.
  6. Mix together yogurt, apricots, mustard and sugar.
  7. Heat until warm.
  8. Spoon warm apricot-mustard sauce over each breast.
