Low Carb Turkey Stuffed Peppers

Ingredients:

Directions:

  1. Pre-heat oven to 400°F
  2. Lightly coat a large nonstick skillet with cooking spray and heat over medium heat.
  3. Add onion and garlic; saute two minutes or until softened.
  4. Add ground turkey breast, salt, garlic powder, and cumin.
  5. Break meat apart and cook over medium heat for 14-16 minutes or until well done.
  6. Add tomato sauce and 1/4 cup chicken broth.
  7. Reduce heat to low and simmer for about five minutes.
  8. Add cilantro and mix well.
  9. Cut peppers in half lengthwise and remove seeds and stem.
  10. Place in baking dish. Spoon 1/4 of the turkey mixture into each pepper half.
  11. Pour remaining 1/4 cup chicken broth in the bottom of the baking dish.
  12. Cover with foil and bake for 35 minutes.
  13. Sprinkle with cheese and serve.
