Lithuanian Cranberry Pudding for Christmas Eve

Ingredients:

  • 1 cup sugar
  • 2 cinnamon sticks
  • 4 whole cloves

Directions:

  1. Transfer cranberries into a pot.
  2. Pour in enough water to cover, add cinnamon sticks and whole cloves.
  3. Heat until cranberries begin to break up.
  4. Remove from heat, press mixture through a food mill.
  5. There should be about 4 cups [1 L] of juice and pulp.
  6. Chill a little of cranberry juice and mix sugar into remaining cranberry mixture.
  7. Dissolve potato starch into chilled cranberry juice and add to pulp and juice mixture.
  8. Return juice and pulp to pot.
  9. Bring to a gentle boil stirring constantly; heat until the mixture becomes clear.
  10. Pour hot pudding into individual glass bowls.
  11. Refrigerate until set before serving.
