Lite Carrot Cake Muffins From Weight Watchers

Ingredients:

  • 1 1/2 cup. shredded carrots
  • 2 1/4 cup. flour
  • 0.33 cup. sugar
  • 2 eggs
  • 1/4 cup. oil
  • 1 cup. 2% milk
  • 1 tsp cinnamon

Directions:

  1. Mix wet ingredients together in one bowl, and dry ingredients together in another, then mix the two just until blended. Fill 15 muffin cups about 3/4's full and cook at 350 degrees for 16 minutes or until lightly browned and puffed. Frost as desired, opt.
