Ingredients:

  • 5 slices brown bread
  • 2 cups skim milk
  • 2 2/3 cups lentils
  • 3 (200g) onions, chopped
  • 2 tsp turmeric
  • 2 tsp coriander
  • 1 tsp cumin
  • 90 ml vinegar
  • 4 oz chutney
  • 4 eggs
  • 60 ml raisins

Directions:

  1. Boil lentils in 5 cups water until soft, then rinse and drain.
  2. While lentils are cooking, soak bread in 1 cup milk.
  3. Mash bread with a fork and add to lentils.
  4. Fry onions and apple in non-stick pan.
  5. Add spices, vinegar and chutney.
  6. Pour onion mixture into lentil mixture.
  7. Add 2 eggs and 60ml raisins.
  8. Spoon into baking dishes.
  9. Mix together remaining cup of milk and remaining 2 eggs.
  10. Pour this mixture on top of the lentil mixture, stick a few bay leaves vertically into the top, and bake at 180 degrees celsius for 30 to 50 minutes.
