Lemon Tea (Cha De Limao)

Ingredients:

  • 3 cups cold water
  • 3 lemons , zest of
  • 1 tbsp sugar or 1 tbsp honey

Directions:

  1. Bring the water and the lemon zest to a simmer in a small, heavy suacepan set over moderately low heat.
  2. Once simmering, turn the heat as low as possible, cover, and let the mixture steep for twenty minutes (do NOT allow the mixture to boil or it will become bitter).
  3. Sweeten, if you like, with honey or sugar, strain, and serve steaming hot.
