Lemon Meringue Pie

Ingredients:

  • 7 tbsp cornstarch
  • 1 1/2 cups sugar
  • 1/4 tsp salt
  • 1 1/2 cups hot water
  • 1/2 cup lemon juice
  • 2 tbsp butter
  • 1/2 cup sugar

Directions:

  1. Bake pie crust according to directions on box.
  2. Mix cornstarch, sugar, salt in saucepan.
  3. Add hot water and heat over high heat stirring constantly for about 6 minutes.
  4. Remove from heat and add egg yolks, stirring constantly.
  5. Put back on stove on low for about 4-6 minutes or until thick.
  6. Remove from heat and add lemon juice and butter.
  7. Let cool completely before adding to baked pie crust.
  8. Beat eggs whites until stiff. Add 1/2 cup sugar.
  9. Put meringue over the lemon filling in the pie crust.
  10. Broil on low until meringue is lightly browned.
