Lemon Chia Seed Muffins

Ingredients:

  • 2 cups flour
  • 1/4 cup sugar
  • 1/4 cup maple syrup
  • 1 1/2 tbsp chia seeds
  • 1/2 tsp salt
  • 3/4 cup almond milk
  • 1/2 cup oil or 1/2 cup applesauce

Directions:

  1. Preheat oven to 350 degrees.
  2. Place muffin liners in muffin tin. Makes approximately 12 muffins.
  3. In a large bowl combine the flour, baking powder, salt and sugar.
  4. In a smaller bowl combine the maple syrup, milk, lemon juice and zest and the oil or applesauce.
  5. Stir the wet ingredients into the dry. Fold in the Chia seeds.
  6. Fill muffin tins with the batter.
  7. Bake for 18 minutes.
